化学性质1、酸碱性

其冷水制成的没有搅动的溶液，其水溶液因水解而呈微碱性，对酚酞试纸仅呈微碱性反应，放置或升高温度，其碱性增加。

2、稳定性

受热易分解，在65℃以上迅速分解，在270℃时完全失去二氧化碳，在干燥空气中无变化，在潮湿空气中缓慢分解。

3、常见化学反应

在与水结合后开始起作用释出二氧化碳CO，在酸性液体（如果汁）中反应更快，而随着环境温度升高，释出气体的作用愈快。

碳酸氢钠在作用后会残留碳酸钠，使用过多会使成品有碱味。碳酸氢钠水溶液呈弱碱性。

（1）与HCl反应：NaHCO+HCl==NaCl+HO+CO↑

（2）与NaOH反应：NaHCO+NaOH==NaCO+HO

（3）与AlCl双水解：3NaHCO+AlCl====Al(OH)↓+3CO↑+3NaCl

（4）与Al(SO)双水解：Al(SO)+6NaHCO==3NaSO+2Al(OH)↓+6CO↑

（5）与氢氧化钙反应：要分过量和少量。

NaHCO+Ca(OH)（过量）==CaCO↓+NaOH+HO

2NaHCO+Ca(OH)（少量）==NaCO+CaCO↓+2HO

受热分解：2NaHCO==（加热）NaCO+HO+CO↑

（6）水解反应：2HCO +HO=（可逆）=HCO+OH

（7）电离方程式：NaHCO=Na +HCO
